Wynad-Pepper-Horizontal-4

Pepper is a finicky thing. It can smell gloriously spicy and nuanced, or it can smell like a wet dog. It can be the perfect addition to a cocktail, or can make your mac and cheese the best. All of this, of course, depends on the quality of the pepper. (Can you tell I like to source, and eat, quality ingredients?)

Here at Eat Boutique we reach for the best ingredients as often as possible. Which is why we fell for this Wynad Pepper – isn’t it lovely (seriously, the most photogenic of peppercorn)? This pepper is sourced from a single estate in the Wynad district of Kerala, India.  The people behind Wynad work hard to make this the best quality product they can, allowing the peppercorns to ripen naturally on the vine and drying them in the sun.

The craftsmanship of a handmade product truly shines in this circumstance – the nuanced flavors of the carefully dried and cured Black Pepper and the spicy, subtle heat of the White Pepper make Wynad a great addition to any spice cabinet. The white pepper is soaked in spring water for twenty days(!) to give it the truest flavor. We’re loving this pepper and thinking up all sorts of creative ways to use it.

A huge thanks goes out to the “(wo)man behind the curtain” Didi Davis of Salt Traders, without whom we wouldn’t have found this pepper or many of our other fantastic offerings. Salt Traders is truly a force for good in the cooking world, we can’t wait to see what they put out next.
