Beautiful Purple Potatoes

Nothing much to post today. Just sharing a photo of these beautiful organic purple potatoes that I prepped with olive oil, salt and pepper last week. They are just perfect as they are, aren’t they?

    There’s another version which is middle-eastern I believe, where you also cover with honey and garlic powder while broiling. Works with any potatoes but less with the idaho variety. Mix in baby carrots for added color
