Sometimes I want apple pie but don’t have the patience to make pie crust nor do I have the frozen option sitting in my freezer. Tonight, I primarily wanted to find a way to use up some apples that had seen finer days. And, secondarily, wanted apple pie.
And if you believe that one, I got a bridge to sell you too.
This was so easy, and I tend to do it with most fruits when they’re too ripe or about to fade. I peeled and sliced up the apples into half-moons. I then sauteed them in a touch of butter, maple syrup, lemon juice and sugar. You could add cinnamon and lemon zest or even use brown sugar or honey. Really, any combination will do. Saute until the apples are soft. Pile into a bowl and top with your favorite accompaniment. I chose vanilla ice cream. You could also use whipped cream or mascarpone cheese.
This was terribly warming and begged me to enjoy seconds. I resisted and went for some mint tea instead, hoping the mint tea would whoosh away the calories. No such luck, but not too worry. I have no more ice cream in the freezer and can now begin the body cleanse with veggies and fruits and tea. It’s about time too. December did a number on my body. Time to start again.
