Nigella Lawson, UK-based cookbook author, TV show host and socialite, has a new show on the Food Network called Nigella Express. It’s all about creating quick and easy stylish cuisine. I have adored Nigella since her very first BBC show. She’s not a chef and she’s not a very fancy cook, but she gets the job done and is always so posh.
In a recent episode, she presented this recipe for what she calls Amaretto Syllabub. It’s basically whipped heavy cream with tons of flavorings and layers of crushed amaretti cookies. It’s so simple and relatively light (aside from all that heavy cream) – and it made wonder whether I could fold in some canned pumpkin and make a sort of pumpkin mousse which would be so easy to assemble on Thanksgiving day (not to mention a little more loftier than the typically pumpkin pie). If anyone has any suggestions or alternative recipes for a similar pumpkin-flavored dessert, please post them in comments. Thanks!
