Celebrate Fall

I celebrated the coming of Fall with a marathon cook-fest this morning.

(My husband just loves these days when I obsess about breakfast, lunch and dinner all at once. On one hand, he reaps the benefits. On the other, I’m totally silent, which is so atypical for me. He loves silence.)

So this morning, I knew I had only a few hours before I had to head off for work. After a breakfast of vanilla and nutmeg French toast made from thick slabs of Italian bread (Is that odd?), I set to work. Here was the task list:

  • Whip up some chocolate chip cookies, for an afternoon treat for the husband
  • Make chicken stock from the leftover chicken carcass and root vegetables picked up at the farm earlier this week
  • Roast a spaghetti squash for husband’s afternoon meal
  • Prepare a Sicilian Chicken dish with organic chicken parts (breasts, thighs, legs) and more great farm vegetables (peppers, potatoes, eggplant, tomatoes) along with hefty servings of Sicilian olives and capers

The cookies are done, broth is still simmering and spaghetti squash needs another 15 minutes or so. The Sicilian Chicken dish is so easy and I plan to post the recipe later tonight. It should be ready in about an hour and I’m toying with letting it meld in the fridge overnight and enjoying it as a decadent lunch on Monday afternoon – perhaps with a light red wine to celebrate the cooler weather. Or, I could be very European and have a late dinner with it around 9 PM tonight. What would you do?

I suppose, one could have worse problems…
